Amylase
Amylase is a digestive enzyme that breaks down starch molecules into simple
sugars. It
is secreted by the salivary glandsan
d pancreas. Amylase has
anti-inflammatory
properties. Salivary amylase initiates digestion of starch and helps break down
starch-
containing debris around the teeth and interacts specifically with some oral bacterial
species and may play a role in modulating the adhesion of those organisms to
teeth.
Amylase (as well as papain, bromelain and protease)
supports healthy digestion and
